What does this sentence mean?

On page 11 of In This Mountain by Jan Karon, a character is speaking with his mouth full. He says “doo fimmity glogalong, doo muss ahtoo” does anyone know how to decipher this? I think “doo muss ahtoo” means “too much to do”, but I am perplexed by “doo fimmity glogalong”.
Father Tim is saying how he is going to write a book of essays. JD replies with a blank stare that he has read a couple of essays…then eats sausage and says “Doo Fimmity Glogalong, doo muss ahtoo.” Father Tim sighs “That’s one way of looking at it.”

You should give some background info about what they’re talking about. Doo fimmity might mean definitely.
